Signature Sip Lavender Lemon Sparkler

Something Borrowed, Something Blush: The Lavender Lemon Sparkler for Spring & Summer Weddings

May 13, 20264 min read

Some cocktails are pretty. Some are delicious. The best ones are both — and they tell you exactly what season you're in the moment they arrive in your hand.

The Lavender Lemon Sparkler is a Spring & Summer wedding cocktail through and through. Soft, blush-lavender in color, fragrant with real culinary lavender, bright with fresh lemon, and finished with the gentle effervescence of prosecco — it's the kind of drink that photographs beautifully, scales gracefully, and earns a genuine reaction when guests pick it up for the first time.

For bartenders and event planners looking for a signature cocktail that feels intentional rather than generic, this one delivers. Here's everything you need to make it work — from a single coupe to a full wedding reception.

What Makes It Work

The foundation of this cocktail is lavender simple syrup — and it's worth taking a moment on this, because it matters. The lavender color and the lavender flavor come from the same place: dried culinary lavender steeped in a sugar-water syrup. No artificial coloring, no extracts, no shortcuts. The result is a soft blush-purple hue that varies slightly depending on steep time, and a floral flavor that is unmistakably lavender without being overpowering.

Paired with fresh lemon juice for brightness and prosecco for lift, the drink is balanced, elegant, and completely honest about what it is. That's exactly the right note for a wedding cocktail.

The Recipe — Per Serving

Ingredients:

  • 1 oz lavender simple syrup

  • ¾ oz fresh lemon juice

  • 3 oz prosecco, chilled

  • Ice (for shaking)

To make the lavender simple syrup: Combine 1 cup sugar, 1 cup water, and 2 tablespoons dried culinary lavender in a small saucepan. Bring to a gentle simmer, stirring until sugar dissolves. Remove from heat and steep for 20 minutes. Strain through a fine mesh sieve and cool completely before using. Syrup keeps refrigerated for up to two weeks — make it well in advance for events.

To build the cocktail: Combine lavender simple syrup and fresh lemon juice in a cocktail shaker with ice. Shake briefly to chill and combine. Strain into a chilled coupe or champagne flute. Top with prosecco. Garnish and serve immediately.

Garnish

The garnish is part of the presentation, and for this cocktail it should be simple and intentional.

The standard: A fresh sprig of culinary lavender and a delicate lemon twist, rested together on the rim of the glass. Clean, recognizable, and immediately communicates what the drink is.

For elevated presentation: A single small fresh lavender bloom alongside the lemon twist, with the stem trimmed short so it sits neatly. This works beautifully for intimate weddings and VIP tables where the extra detail matters.

For high volume: The lemon twist alone is sufficient and still looks polished. Pre-cutting twists before service begins keeps the bar moving without sacrificing presentation.

Scaling for Events

Intimate wedding or bridal brunch (up to 30 guests) Make the lavender syrup in two batches ahead of time. Individual shaking per order is manageable at this scale and gives each cocktail the right chill and dilution. Pre-set garnishes on a tray for quick finishing.

Mid-size reception (30–150 guests) Batch the base — lavender syrup and fresh lemon juice combined in the right ratio — and refrigerate until service. Pour the base over ice in the shaker, shake briefly, strain, and top with prosecco to order. This keeps the prosecco's effervescence fresh while dramatically speeding up service.

Large event (150+ guests) Pre-batch the syrup and lemon base in large quantities. Consider a signature cocktail station where guests receive a pre-poured base with prosecco added tableside or by a dedicated station bartender. This approach maintains the visual elegance of the drink while keeping pace with high-volume demand. Lavender sprigs can be prepped and stored in damp paper towels until service.

The Mocktail Version

The Lavender Lemon Sparkler translates beautifully as a non-alcoholic option — which matters more than ever at modern weddings where guests increasingly expect a thoughtful zero-proof alternative, not an afterthought.

Lavender Lemon Sparkler — Mocktail:

  • 1 oz lavender simple syrup

  • ¾ oz fresh lemon juice

  • 3 oz chilled sparkling water or non-alcoholic sparkling wine

Build the same way. The color and flavor hold perfectly. Garnish identically. When served in the same glassware, it's indistinguishable on a tray — which is exactly the point. Every guest deserves an equally beautiful drink.

A Note on Presentation

The Lavender Lemon Sparkler looks best in a crystal coupe — the wide, shallow bowl shows off the color and makes the garnish feel intentional. If coupes aren't available, a champagne flute works well. Avoid stemless glassware for this one; the stem is part of the elegance.

For batched service, keep the prosecco cold and add it last. A warm sparkler is a flat sparkler, and a flat sparkler is a missed opportunity.
